Chicken Tortilla Soup

Okay…I know, it’s Recipe Tuesday.  I nearly forgot for today.  I promise to do better in the future!  I can’t wait to hear how you guys like this.  It’s yummy and pretty low in fat.  Let me know how it turns out for you.  Happy Tuesday! 

Chicken Tortilla Soup

5 Boneless Cooked
Chicken Breasts – shredded
4 Cups Water
4 Cups Chicken Broth
1 Can Rotel
1 Can Corn
12 oz. Velveeta
Light
1 Can Cream of Chicken Soup
¼ Cup Sautéed
Onions
1 tsp. Garlic
Powder
1 tsp. Chili
Powder
1 tsp Salt
½ tsp Pepper
 

Cook on stove-top
for 30 minutes. Serve with tortilla
strips or chips.

As you can see, I really like soups this time of year.  They are fast and easy!
